Vinaigrette – Bramble
Last year’s blackberry season began unusually early which leads us to believe that given the recent hot spell we are likely to see the first fresh pickings in just a few weeks. Don’t be fooled into believing that blackberries are only for jams and crumbles. Get creative with Chef Hylton’s recipe for his delicious bramble inspired vinaigrette to add a zing to any fresh summer salad.
Vinaigrette – Bramble
1 clove garlic, minced
100ml berry vinegar (see below)
100ml cold pressed rapeseed oil
10g thyme, picked and chopped
salt
pepper
1. Mix together
Berry vinegar
500g fresh blackberries
500ml red wine vinegar
1 star anise
20g thyme
100ml sugar
- Cut berries in half and sprinkle with sugar
- Heat vinegar, anise and thyme in a pot until it starts to simmer
- Remove from heat and strain onto berries
- Allow to cool
- Store in the fridge
