South West Chef of the Year Countdown!

As many of you know, this Monday I will be competing in the final of the biggest competition I have ever been involved in, the Professional South West Chef of the Year!

As many of you know, this Monday I will be competing in the final of the biggest competition I have ever been involved in, the Professional South West Chef of the Year. I’ll be back at Exeter College on the 27th October to face the judges alongside the three other finalists.

For the final I will be given a ‘mystery box’ of ingredients and then have two and a half hours to decide on my dishes and cook a three-course meal for the judges. I’ve never done anything like this before – for the semi-finals we knew our ingredients in advance and I practiced and tweaked my dishes several times before the day so this will be challenging!

I have been practising hard though – Nick, Sioned and the team here at the Manor are making me sweat with trial runs using their own versions of a ‘mystery box’ of ingredients. We’re also always adding new and creative dishes to the Brasserie menu and it’s not dissimilar to when our wild food forager Mike Lavers of Foods Wild brings his weekly finds to our doorstep that inspires many of my specials so I’m hoping my experience there will come in handy, I’ll just be up against the clock a tad more!
