Welcoming our new Food & Beverage Manager

As the seasons change and we work our way through autumn, we have some new faces joining our dedicated team.

As the seasons change and we work our way through autumn, we have some new faces joining our dedicated team. One of which who will be adding a particular flair to the dining experience is our new food & beverage manager, Roan Spring.

An old colleague of our head chef and chef-patron Dale McIntosh, Roan has an extensive background in the industry with experience in some of Cornwall’s most beloved restaurants and gastro pubs, including Bustophers bar & bistro and Castaways restaurant and wine bar in Mylor. Having worked alongside Dale before, Roan has a strong understanding of Dale’s vision for The Brasserie.

“I know how passionate Dale is about sourcing quality local produce, he always has been. I’m excited to play such an important role in making sure we give customers the very best dining experience to complement Dale’s efforts.”

 Last week saw the introduction of Dale’s latest seasonal menu. With winter warmers using a variety of the freshest seasonal ingredients, the inception of our new autumnal menu is the perfect opportunity for Roan to get stuck in working with Dale to create the perfect dining experience.

“I’ve been keeping my eyes peeled for a new challenge, so when the opportunity to join the Merchants Manor team surfaced, needless to say – I jumped at the chance. The F&B team here are diverse and dedicated, I’m looking forward to working with them to create the unparalleled service that Dale’s food & our customers deserve.”

Roan’s arrival is just in time for the very busy months ahead.  Alongside the many functions at the Manor, the Brasserie is also hosting a number of special events, including a special Oyster & Champagne evening in collaboration with Laurent-Perrier.
